OUR VINEYARD & WINERY
Parow Estate Winery is located at the foothill of Palomar mountain in the Temecula Valley southeast of the greater Los Angeles county. After an extensive soil and climate evaluations, and determination of the suitability of the terroir, we planted Cabernet Sauvignon and Petite Sirah grape vines in 2008 and expanded this later to include Shiraz, Merlot and Cabernet Franc. There are 9 vineyards located at various hills and valleys of the approximately 20 acre property, each with unique terroir and micro-environment. The soil in our vineyards are made up of light sandy loam which allows good drainage.
From its inception, we have practiced environmentally sustainable agriculture without use of artificial fertilizers or pesticides. Only organically approved products have been used in our vineyards. On harvest season, after daily examination of the grape clusters, the sugar content is tested and once the appropriate level is achieved, harvesting begins. All our grapes are hand harvested and fermented at constant temperature. Upon, conclusion of fermentation, the must is allowed to rest for a day or so and then pressed. Prior to pressing, free run wine is collected and placed in French oak barrels for our reserve wines. No secondary fermentation is performed on our wines since we believe the traditional wine making techniques achieve the best results that we can taste in our wines.
The wine is cellared for 24 months in oak barrels. Multiple racking and tastings as well as testing are done throughout this period to maintain the quality of the wine. The wines are clarified using egg whites, which removes floating particulate matters. It is at this point that we bottle the wine. After 8 weeks the wine is released to our club members and clients.
OUR WINES
All our Reserve wines are made from the free run juice obtained after fermentation and aged in French oak barrels for 24 months. All other wines are aged in American oak barrels for the same period. Our Bordeaux - style claret wine consisting of Cabernet Sauvignon, Merlot and Cabernet Franc is currently aging in French and American oak barrels and expected to be released on 2020. We also have a limited cases of 2014, Cabernet Sauvignon, Vintner's Special Blend (VSB) which consists of 80% Cabernet Sauvignon and 20% petite Sirah. 2016 VSB II, has 60% Cabernet Sauvignon and the rest, petite Sirah.
